

10/16/24: My homemade spaghetti is finally kids-approved. Here is my spaghetti seasoning mix recipe and the different spaghetti variations using different branded tomato sauces.


Ingredients For Spaghetti Seasoning Mix
The following measurements is for one pound of beef.
- 2 teaspoon dried basil
- 2 tsp oregano
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp ground black pepper
- 1 tsp salt
- 1 tsp sugar

Note: Ingredients above is my kid-friendly version. I have each of my kid measure out the seasoning ingredients and added to a major jar. They repeat the measurements until the jar is filled. I would use fresh Thai basil or Sweet basil leaves instead and prefer to use fresh diced onions.

Ingredients for spaghetti recipe:
- 1 pound beef (70/30 fat)
- 3 Tbsp of spaghetti seasoning mix
- 2 Tbsp olive oil
- 1 can 28-ounze Cantinada Tomato Paste
- 1 can 14-ounce tomato sauce
- Optional: 1 Tbsp fish sauce


Direction:
1. Heat up 14-inch Hexclad pan with 2 tablespoons of olive oil.

2. Pour in the tomato paste and sauce.

3. Once the tomato sauce is bubbling, add in three tablespoons of the spaghetti seasoning mixture.

4. This is the most important part to determine whether my kids and I will like the taste of our spaghetti or not. Taste the spaghetti sauce! If it’s too tart or sour, add in a little more salt or Viet Huong fish sauce. Yes, I use fish sauce in my spaghetti for my kids. Fish sauce balances out the flavor well. Once the spaghetti sauce taste just right to your taste buds, then we are ready to add the ground beef. My white folks usually use salt. I tried adding salt but it just feels like it’s missing that unami flavor for me to like to eat it.

5. Add in the ground beef. Use a spatula or large serving spoon to splash and separate the clumps of ground beef. (My kids and I hate spaghetti meatballs.) Cook for about 5 minutes. Turn off heat.

5. Cook pasta of your choice. My kids like to eat with angel hair pasta or elbow pasta.
