The following homemade pho noodle made from scratch recipe is a contribution from Gabrielle Sen Vuvivu, a home chef who loves to cook for her family and son in Canada. She shares her delicious homemade food and recipes at Sen’s Kitchen Canada.

- Prep and cook time: 30-40 minutes
- Serving: 4 bowls
- Notes: I used a Kitchen Aid Artisan standing mixer, Phillips Pasta Maker, and pho/hu tieu noodle disc size 3mm that I ordered from Facebook group, Gia Dung Bep Banh.

Ingredients:
- 300 gram rice flour
- 130 gram tapioca starch (flour)
- 295 ml boiling water (I used 300 ml)
- 2 tsp salt
- 2 Tbsp vegetable oil
- 2 tsp lime juice
- 100 gram potato starch (or cornstarch as substitute)
Direction:
1. Measure out all ingredients.

2. Mix the rice flour, tapioca starch, salt, oil, lime juice together in a standing mixer bowl for one minute. (Do NOT add the potato starch yet.) Start boiling the water.

2. Pour in 300 ml boiling water. And I mean literally bubbly boiling water.

3. Mix the flour mixture for five minutes.

4. THEN add the potato starch. Mix well for two minutes until the flour are all combined.

5. Transfer the mixture to the Phillips machine. Run a full circle for 15 minutes.

6. After the first cycle, microwave the noodles for two minutes. Then transfer noodle back into the Phillips machine to run the second 15-minute cycle.

7. Cut off the first noodles which doesn’t form into a good shape back into the machine. When you see the noodle smooth and chewy (not dry nor wet), you have successfully made your fresh batch of Vietnamese pho noodle. Congratulations!

8. Cook the pho noodle in boiling water for two minutes or until the noodle is floating. Rinse the noodles two times with cold water and then the third time with warm water.

Enjoy!

Coming soon in 2020 is my pictorial documentation for my beef pho noodle soup recipe!

Behind the scene:
My unrelated brother Luke came to help us make the pho noodle for the first time. It was all our first time using the Phillips Pasta Maker machine. The machine was easy to take apart and the parts are easy to clean as well. We tried using two different discs sizes and preferred the pho 3x1mm disc much better.

Your pho noodle recipe looks legit! I tried so many other ways of doing it and it still gave me that raw taste. I hope to give yours a try soon!
Let me know how it goes.
I can’t afford the pasta machine but do have the stand mixer with pasta attachment. How do I finish the noodles?
No. I do not the pasta attachment for the stand mixer.
Can I make glass noodles this way?
Hi, why do you need to microwave the dough for 2 mins after the 1st cycle in the noodle maker.
Please contact Sen at https://www.facebook.com/senskitchen.canada for the answer. That is her pho noodle recipe and she gave me permission to create a pictorial recipe to document on my blog for my kids and share with others who needed a step by step visual aid. I don’t have the answer. The kids pictorial demonstration won first place in her cooking group on Facebook. =)
