Stir fry Snow Peas Tips with Garlic – Dot Hoa Lan Xao Toi

Stir fry snow peas tips with garlic is a simple and quick vegetable dish to accompany with a traditional kho dish.

Ingredients: to fit my 11-inch deep pan

1 bunch or bag of snow peas tips (about 1.5 – 2 lb)
1 tsp mined or sliced garlic
2 Tbsp vegetable or peanut oil

Seasoning: Option A
1/8 tsp sugar
1/8 tsp kosher salt
1 Tbsp oyster sauce

Seasoning: Option B
1/8 tsp pink salt
1/4 tsp sugar
1 Tbsp yellow soy bean paste

Prepping the snow peas tips: 


The snow peas tips are soft and not tough and chewy like the stems. Back in Garland, Texas, I would be able to pick out handfuls of snow peas tips.  Here in the Orlando, Florida area, it is all bagged up.  If I get lucky, I’ll have a nice bunch.  If not, then I would end up discarding the chewy stems that some markets tried to cheat you off.  The stems are tough and chewy and only the first three inches from the tips are good to eat. Rule of thumb, if you can’t snap the stems off easily with your fingers and bends like a straw,  it’s no good. Wash and strain the vegetables in colander.

Direction: (stir fry less than 5 minutes total)

1.  Heat pan with 2 Tbsp of vegetable oil on high heat. Toss in the garlic until it sizzles.

2.  Add in the snow peas tips.  Just add in about half at a time. Stir the bottom up.  The snow peas tips will flatten and you can add the rest of the tips into the pan.

3.  Add in the seasoning mix.

4.  Stir well and transfer to a plate.  Serve great as a side dish with steamed jasmine rice and a kho dish.
