Stir-fry Japanese Udon Noodle 2

Stir-fry this Japanese udon noodles with broccoli and shrimp quickly for my little foodie while she was napping today. My mom liked it too! 


Prep and cook time total: 30 minutes

Ingredients:

1 broccoli crown (about 2 cups)
2 bundles of HIME’s Japanese udon noodles (200 gram)
1 bunch scallion
about a dozen shrimp (peeled and deveined)
pinch of salt and black pepper 
1 tsp minced garlic
2 Tbsp water
1 Tbsp vegetable oil

For the stir-fry sauce:
2 Tbsp Euro Maggi seasoning sauce
3 Tbsp Hoisin sauce
1 Tbsp fish sauce
1 Tbsp sweet soy sauce
1/2 tsp mirin (sweet rice wine)
1 tsp minced garlic 
1 tsp roasted sesame seeds
1 tsp onion powder (not pictured)
1/4 tsp black pepper


Cooking Direction: 

1.  Peeled and deveined the shrimp.  Add a pinch of salt, black pepper, and minced garlic to the shrimp.  Set a side.  Prep the broccoli and chop the scallion. 



2.  Cook two bundles of the Japanese udon noodles for 10 minutes (not 12 like indicated on the instruction since I use it to stir-fry later) in bowling water. Strain.



3.  Mix the stir-fry sauce together.



4.  Heat up deep 12 inch pan.  Add in 1 Tbsp of vegetable oil on high heat.  Toss the shrimp for a few seconds and transfer it out and set a side.



5.  While the pan is still hot, add in 1 Tbsp of oil.  Then add in the broccoli with 2 Tbsp of water.  Stir fry broccoli on high heat for about one minute.  


6.  Toss in the the udon noodles and chopped scallion.  


7.  Then drizzle the stir-fry sauce over and mix the ingredients up well. Cook for one minute.  Transfer to plate and serve. Enjoy!
