Homemade Pho Noodle Recipe

The following homemade pho noodle made from scratch recipe is a contribution from Gabrielle Sen Vuvivu, a home chef who loves to cook for her family and son in Canada.  She shares her delicious homemade food and recipes at Sen’s Kitchen Canada.

Ingredients: 

Direction: 

1.  Measure out all ingredients.

2.  Mix the rice flour, tapioca starch, salt, oil, lime juice together in a standing mixer bowl for one minute.  (Do NOT add the potato starch yet.) Start boiling the water.

2.   Pour in 300 ml boiling water.  And I mean literally bubbly boiling water.

3.  Mix the flour mixture for five minutes.

4.  THEN add the potato starch.  Mix well for two minutes until the flour are all combined.

5.   Transfer the mixture to the Phillips machine.  Run a full cycle for 15 minutes.

6.  After the first cycle, microwave the noodles for two minutes.   Then transfer noodle back into the Phillips machine to run the second 15-minute cycle.

7. Cut off the first noodles which doesn’t form into a good shape back into the machine.  When you see the noodle smooth and chewy (not dry nor wet), you have successfully made your fresh batch of Vietnamese pho noodle.  Congratulations!

8.  Cook the pho noodle in boiling water for two minutes or until the noodle is floating.  Rinse the noodles two times with cold water and then the third time with warm water.

Behind the scene:

My unrelated brother Luke came to help us make the pho noodle for the first time.  It was all our first time using the Phillips Pasta Maker machine.  The machine was easy to take apart and the parts are easy to clean as well. We tried using two different disc sizes and preferred the pho 3x1mm disc much better.
