April 2023: This recipe was made possible thanks to Farmer Justin Miller in Oviedo, Florida. He had 11 roosters that he needed to get of. I used my 13-quart Greenwise pressure cooker for this recipe.
- prep time: 5 minutes if the chicken has been killed and plucked. Refer to “How I learned to clean a chicken” documentary.
- cook time: 15 minutes
- serving: 5 quarts

Ingredients:
- 1 white rooster
- 5 quarts water
- 2 Tbsp kosher salt
- 2 Tbsp sugar
- 1 Tbsp kaffir lime leaf powder
- 1 Tbsp lemongrass powder
- 1/2 Tbsp onion powder
- 1/2 Tbsp ginger powder
- 1/2 Tbsp garlic powder
- 1/2 tsp black pepper
- 2 Tbsp fried shallots
- 1 Tbsp Lee Kum Kee Chicken Bouillon or 1 Tbsp Viet Huong fish sauce
- optional: 1/2 Tbsp turmeric powder
Direction
In my Greenwise 13-quart pressure cooker, I placed one rooster into the pot. Then I add five quarts of water.
I prepped the chicken broth seasoning mix and add it into the pot.
I sealed the lid tightly and cook the chicken for 20 minutes on high pressure.
Slow release.
