Pressure Cooked Chicken Broth

April 2023: This recipe was made possible thanks to Farmer Justin Miller in Oviedo, Florida. He had 11 roosters that he needed to get of. I used my 13-quart Greenwise pressure cooker for this recipe.

  • prep time: 5 minutes if the chicken has been killed and plucked. Refer to “How I learned to clean a chicken” documentary.
  • cook time: 15 minutes
  • serving: 5 quarts

Ingredients:

  • 1 white rooster
  • 5 quarts water
  • 2 Tbsp kosher salt
  • 2 Tbsp sugar
  • 1 Tbsp kaffir lime leaf powder
  • 1 Tbsp lemongrass powder
  • 1/2 Tbsp onion powder
  • 1/2 Tbsp ginger powder
  • 1/2 Tbsp garlic powder
  • 1/2 tsp black pepper
  • 2 Tbsp fried shallots
  • 1 Tbsp Lee Kum Kee Chicken Bouillon or 1 Tbsp Viet Huong fish sauce
  • optional: 1/2 Tbsp turmeric powder

Direction

In my Greenwise 13-quart pressure cooker, I placed one rooster into the pot. Then I add five quarts of water.

I prepped the chicken broth seasoning mix and add it into the pot.

I sealed the lid tightly and cook the chicken for 20 minutes on high pressure.

Slow release.
