
This “Summer Roll” recipe is an inspiration of Mikado’s Japanese Seafood Buffet restaurant in Altamonte Springs, Florida. No cooking is involved.

Ingredients:
- 1 tray Costco’s Cocktail shrimp
- 1/2 pineapple
- 2 Kent mangos or any sweet medium-firm fiberless mangos
- 1 Persian cucumber
- Mixed Greens lettuces
- Vietnamese rice paper wrapper


Note: I pretty much bought the ingredients except for the rice paper from Costco. I recommend using the Tufco brand with the bamboo logo for the Vietnamese rice paper to wrap the rolls. Rice paper wrappers are available at any Southeast Asian markets. A substitute for gluten free choice is the Taopica Sheets by Three Golden Coins brand.
I can eat it without any dipping sauce too since the sweetness, sourness, and juiciness comes from the fruits already. I don’t know what kind of sauce the restaurant drizzled over the tray of these rolls though.
Directions:
1. Prepping: Slice the large cocktail shrimp in halves. Peel, cut and slice the Golden Sweet pineapple, and Kent mangos into long thin strips. Do so with the cucumber if using that.

2. Wet the rice paper and lay it flat on a plate. Then layer with three pieces of shrimp.

3. Next, layer with mixed greens, pineapple and mango strips. I used two of each.
4. Finally, layer a few mixed greens to cover the fruit from touching the rice paper. The wetness moisture in the fruits can cause the rice paper to tear easily.
5. I just have to say practice makes perfect. Do your best to roll these rolls up until it looks perfect. I screwed up many rolls before it looks this nice. Cut the rolls into four pieces if you want to make it bite size serving pieces like how Mikado’s Japanese Seafood Buffet does it. Enjoy!
Tip: Rice paper wrappers will stick to one another when you wrap it and stack it together. Therefore, DO NOT do that! Here is my rolled batch of summer rolls ready for the beach with my friends. My friend told me to rub each roll with a light olive oil coating and wrap it with plastic cling wrap. I find using these sandwich bags work just fine too.

Note: Any rolls using rice paper wrapper is only ideal to be eaten and served freshly made. If you attempt to prep it a night ahead of time and store it in the refrigerator, it won’t taste good or look good. Don’t say I didn’t warn you. 😂
