2.  Mix the rice flour, tapioca starch, salt, oil, lime juice together in a standing mixer bowl for one minute.  (Do NOT add the potato starch yet.) Start boiling the water.

6.  After the first cycle, microwave the noodles for two minutes.   Then transfer noodle back into the Phillips machine to run the second 15-minute cycle.

7. Cut off the first noodles which doesn’t form into a good shape back into the machine.  When you see the noodle smooth and chewy (not dry nor wet), you have successfully made your fresh batch of Vietnamese pho noodle.  Congratulations!

8.  Cook the pho noodle in boiling water for two minutes or until the noodle is floating.  Rinse the noodles two times with cold water and then the third time with warm water.

Behind the scene:

My unrelated brother Luke came to help us make the pho noodle for the first time.  It was all our first time using the Phillips Pasta Maker machine.  The machine was easy to take apart and the parts are easy to clean as well. We tried using two different discs sizes and preferred the pho 3x1mm disc much better.
